For over 20 years Cà Rovere has chosen to specialize in classic method sparkling winemaking: from a careful study of the territory, which has a marked minerality and flavor given by his marine origin, the company produces vintage sparkling wines with a minimum of 36 months on the lees.
The company's characteristic cuvée is represented by the blending of the grapes Chardonnay e Garganega, perfect mix of elegance and territorial personality: lo Chardonnay, represents the main grape of the classic method and identifies sparkling wines for their delicacy, aromas of white flowers and a beautiful flavor that envelops the palate. There Garganega, with the typical hint of bitter almond, characterizes the sparkling wines with the personality of the Berici Hills and giving a more decisive structure and that typical straw yellow color to the wine.
The Cà Rovere line of sparkling wines is made up of 6 labels, which differ in terms of grape varieties and sugar dosage but which have as a common factor a careful selection of grapes and must, soft pressing, a careful dosage of yeasts which lay the foundations for the refinement of elegant, balanced and highly pleasant bubbles.
The other distinctive feature of the company are the long refinements that the sparkling wines rest on the yeasts, starting from a minimum of 36 months up to 96 months of refinement: it is very interesting to hear how these sparkling wines evolve and always maintain their freshness and pleasantness and always hide some unexpected surprises.
