Tasting notes
The fragrance is intense and complex with citrus notes of cedar, dehydrated apricot, acacia flowers, and orange blossom. Hints of yeast, honey, and iodized notes. On the palate, it is enveloping, with a silky foam. It enters soft, balanced with a long fresh-salty backbone. Fruity echoes persist in a dry and savory finish. Straw yellow, crystalline, with elegant perlage.Sparkling Wine Classic Method Blanc de Blanc Magnum

pairings
The classic method Brut Blanc de Blanc sparkling wine is excellent as an aperitif and with fine fish dishes: Vicenza-style cod, shellfish and raw fish carpaccio, sea bream baked in foil and lobster in plain sight.

The Magnum format
Cà Rovere Magnums are handcrafted. The cellarmen carry out the remuage on wooden stands according to the more traditional procedure of the champenoise method. The Magnum format is striking and brings joy, but also improves the quality of the wine. Compared to smaller formats, the ratio of oxygen to wine in the bottle is lower. In the classic method, in particular, a larger bottle provides a greater surface area on which the yeasts remain in contact with the wine. The fermentation proceeds more slowly, and the refinement will be longer and of higher quality. Furthermore, the greater thickness of the glass shields external light better, slowing down the oxidation processes of the wine.Find out more about the Classic Method
